Smoking with wood!

Ingredients:

Pecan
Oak
Apple
Mesquite
Hickory

Method:

Typically is will use the following wood combinations for smoking and grilling vaious meats. An outline is listed below. These are just my ideas and experience for grilling and smoking with wood!

Chicken - Typically mesquite wood is great for chicken. I will sometimes use a combination of mesquite and pecan for chicken. I am sure apple wood would work as well in combination with mesquite although I have not tested that.

Beef: Beef is excellant with most hard woods. I recommend oak or pecan for beef especially when paired with my steak marinate! Mesquite wood works for beef as well. Each different wood brings a unique flavor although in general the hard woods are best for smoking and grilling.

Pork: in general, pork is best smoked with a combination of hickory, apple, and/or pecan. Some use cherry wood which has a great flavor when used in small quantities. My personal favorite combination of wood for smoking pork consists of pecan and apple. Pecan and apple are sweeter woods which work really well with pork.

I would encourage you to experiment with various wood combinations as there are many woods which are great for grilling and smoking meat! Just remember that hard woods are the best for cooking!
