Rotel Potatos

Ingredients:
1 bell pepper (chopped)
1 purple onion (diced)
1 package fresh mushrooms
1 can Rotel tomatoes
1 Lb Velveeta cheese
2 large potatoes
1 Tbs olive oil
Method:
Wash and wrap potatoes in wax paper and bake in microwave oven for 15 minutes or until tender. Sauté bell pepper onion and mushrooms in olive oil until soft and transparent. Add Rotel tomatoes and Velveeta cheese and cook until melted.
Slice potatoes and arrange in baking dish. Pour cheese mixture over potatoes and bake in 350F oven for 30 minutes or until done.
