Lemon Squares

Ingredients:
1 C all purpose flour
1/4 C sifted powdered sugar
1/2 C butter
2 Tbs all purpose flour
1/2 tsp baking powder
2 eggs beaten
1 C sugar
1 rind of lemon grated
3 Tbs lemon juice
powdered sugar
Method:
Combine 1 C flour and 1/4 C powdered sugar; add butter and mix well. Spoon in 9 inch baking pan and press evenly. Bake at 350F 18-20 minutes.
Combine 2 Tbs flour and baking powder and set aside. Combine eggs, sugar, lemon rind and lemon juice. Beat well. Stir dry ingredients into egg mixture and pour over baked crust. Bake at 350F for 25 minutes or until lightly browned and set. Sprinkle lightly with powdered sugar. Cut into 1 1/2 inch squares.
