Lemon Ice Box Pie

Pie recipe:
Beat 3 egg yolks until light and fluffy
Add 1 can sweetened condensed milk to eggs and mix thoroughly
While stirring the mixture, slowly add 1/2 C lemon juice (this will cook the egg and thicken the mixture)
Stir in 1 tsp grated lemon rind
Pour mixture into a pie shell made from vanilla wafers (see below)
Top with meringue (recipe follows)
Cookie crust:
Mix 2 C finely crumbled vanilla wafers with 1/2 C melted butter and line pie pan with mixture
Chill for 30 minutes
Add pie filling
Meringue:
Beat 3 egg whites with a pinch of salt until stiff (they will stand in peaks)
Gradually add 6 Tbs sugar while beating the egg whites
Add 1/2 tsp vanilla and continue beating until the meringue holds its shape
Spread over top of the pie and bake in a slow oven at 300F until golden brown
